Healthy Chocolate Chia Pudding

Do you remember the little pudding cups that came in a variety of flavors? I used to love these little treats. These pudding cups seemed great at first look. They were CONVENIENT which is always a huge factor. They tasted good and were affordable which are more pluses if you want convenience. These on-the-go snacks would last for months due to additives and preservatives.  I remember enjoying them and putting these in my children's lunches. That was then. My go-to pudding is now my healthy chocolate chia pudding which we enjoy several nights a week.

Chocolate Pudding...Then and Now

After researching healthy foods over the past several years, I no longer purchase these quick and easy treats. To replace these treats from the past I now make my healthy chocolate chia pudding,  I enjoy this pudding even more! This recipe is so easy to make and is packed with nutritious ingredients and many health benefits. To begin with, there are no added refined sugars.  I use 100% pure maple syrup as a sweetener. You can purchase pure maple syrup at many grocery stores, health-food stores, online or where I purchase mine at - Costco (yes, I love Costco!). I purchase the Kirkland brand of maple syrup and can be viewed at Kirkland 100% Pure Maple Syrup.

Fiber - Are you getting enough?

The daily recommendation of fiber for adults is approximately 30 grams daily. This is not an easy task. After a routine colonoscopy found polyps, I was told to aim for 30-35mg per day. I thought it would be easy. Boy was I wrong (I'll save this for another post). Chia seeds provide a huge boost in my daily fiber goals. Just one ounce of chia seeds contains ten grams of fiber! Needless to say, chia seeds have become a staple in my pantry.

Chocolate

We LOVE dark chocolate in our house. Dark chocolate offers health benefits (definitely a PLUS) and we love the taste. If you enjoy dark chocolate and would like to try another favorite of mine, I recommend trying my healthy chocolate chip pumpkin muffins. These are easy, healthy and absolutely delicious!

Ingredients
  • 2 cup almond milk (unsweetened)
  • 1/2 cup chia seeds
  • 3 tbsp dark cocoa powder (unsweetened)
  • 3 tbsp pure maple syrup
  • Dash vanillla
Instructions
  1. Add all ingredients into a small mixing bowl.
  2. Whisk ingredients until well blended
  3. Divide evenly into four serving bowls
  4. Refrigerate overnight (or a minimum of 4 hours)
  5. Enjoy plain or with your favorite toppings
