PIZZA!! We love pizza! We especially love this healthy cauliflower crust pizza (anytime you can use a vegetable as the base it's a WIN)! The variety of toppings, gooey cheese, the tangy sauce... all meld together to form a perfect dinner pie. A pie that is filling and satisfying. Pizza's are also fun to make at home where you can create your portion just the way you like it. Making homemade pizzas can also be both educational and fun for kids to help with. They can learn math skills (counting, fractions), learn about spices, temperature, time, flavors and so much more!

Let's Talk Crust & Sauce

Pizza crust can be made out of a variety of products. Many of these products contain products that many people try to avoid including flour and gluten. While these crusts may TASTE good, they may not be good for your health. When branching out and trying non-flour and gluten free options, this healthy cauliflower crust  pizza is a must on your "to try" list. When using this crust, you will be gaining the benefit of adding a vegetable to your meal by using it as the base. You can also be assured there is no flour or gluten added. There are a variety of sauces you can use. You can use a good quality store bought or homemade pesto, a margherita  sauce, a creamy white sauce or a variety of the red sauces. If you like the simplicity of a store bought sauce, one of my favs is the Rao's Pizza Sauce which is low in sugar and has a clean list of ingredients.

Toppings

Here's where the real fun starts! Pizza toppings are an endless possibility. When making this healthy cauliflower crust pizza , some of my favorites toppings include ham, mushrooms, artichokes, sundried tomatoes, spinach, olives, goat cheese and mozzarella cheese. Sometimes I'll add a few slices of turkey pepperoni, onions, peppers. If you like to spice things up a bit, try an Italian Pizza Seasoning sprinkled on the top prior to cooking. One spice blend I enjoy is the Trade East Italian Pizza Seasoning.

Ingredients
  • 1 bag frz cauliflower rice (from the Costco multi-pack) - or 1 head of finely chopped cauliflower
  • 1/4 cup shredded parmesan cheese
  • 1 cup mozzerella cheese (divided into two 1/2 cups)
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp pink Himalayan sea salt
  • 2 eggs
  • optional dried pizza seasoning
Instructions
  1. Preheat oven to 400F
  2. Steam cauliflower according to directions (if using fresh cauliflower, grate first, steam then mash)
  3. Put cooked cauliflower rice in center of a clean kitchen dishcloth – fold the long way, then twist to wring out all of the water. Twist several times to be sure you get out as much water as possible.
  4. Add cauliflower to medium size mixing bowl
  5. Add 1/2 cup of the Mozzarella cheese, Parmesan cheese and spices. Mix well.
  6. Add eggs and mix until well combined.
  7. Place onto parchment paper on baking sheet, then spread cauliflower evenly until about 1/2" thickness. (I use the back of a silocone spatula to press flat then use my hand to go around the crust pushing back slightly to firm up the outside circle of the crust.
  8. Optional - Sprinkle dried pizza seasoning on crust prior to baking
  9. Bake for 20 minutes or until edges begin to brown and crust firms up
  10. Remove from oven, then top with sauce, remaining cheese and toppings of choice.
  11. Bake for 8-10 minutes or until cheese is melted
  12. Remove from oven, let sit 2-3 minutes. Enjoy!

Notes:

  •  pizza sauce of choice (red sauce or pesto) - look for the lowest sugar content
  • Optional Cheese Choices: Mozzarella, goat cheese, provolone, feta are my favorites
  • Toppings - any combination you like (I love sundried tomatoes and artichoke among other items)
